A new model of dining, rooted in collaboration and community.

We partner with restaurants and local food businesses, activating their spaces after hours, to create intimate, collaborative dining experiences rooted in community and regional flavor.

Our Approach

  • We partner with local businesses, farms, and artisans, using existing kitchens + dining rooms during their closed hours.

  • Our menus are designed to highlight local produce and food practices.

  • Menus are designed based on what is locally available, in season, and that contributes to a good, clean, and fair food system. Bringing global inspiration to culinary practices, we rethink how a local food system can taste.

  • Our goal is to help keep resources in the community. We do this by building strong relationships that support local businesses and the local economy.

  • Waste is both our biggest challenge and our greatest opportunity. We look for waste at every step and turn it into value. Whether it’s composting with local farms, repurposing food trim, or redistributing leftover food to local food pantries, our goal is to help build sustainable food systems wherever we work.
